Huevos Rancheros

Ingredients

  • 1 Tbsp canola oil
  • 1/2 cup onion
  • 4 cloves garlic
  • 1 pack tofu
  • Tumeric for color

  • 1 Tbsp canola oil
  • 1 onion
  • 2 jalapeños
  • 4 cloves garlic
  • 16-oz can diced tomatoes
  • 1 cup veggie broth
  • 1/4 cilantro
  • 1 Tbsp ancho chile powder
  • 1 Tbsp guajillo powder
  • 1 Tbsp chipotle powder
  • 1 tsp oregano
  • 1 tsp cumin

  • corn tortillas
  • 1 can vegan refried black beans
  • avocado
  • cilantro
  • lime

Instructions

  • Start with the ranchero sauce.

    • Add oil, onions, jalapeños. Cook until softened.
    • Add all remaining ingredients. Simmer for 20+ minutes.
    • Blend.

  • While the sauce simmers, make the vegan scrambled eggs.

    • Cook onion until softened.
    • Add garlic, cook for 30s.
    • Add tofu, and enough tumeric to color it. Cook until heated.
    • Add black salt, or regular salt, and black pepper to taste.

  • Cook tortillas for a couple minutes with some oil.
  • Assemble tortillas, refried black beans, vegan scrambled eggs. Top with sauce, avocado, and cilantro. Finish with a squeeze of lime.
