Gochujang Noodles

Ingredients

  • 1 bok choy
  • garlic
  • 16oz rice noodles
  • For sauce:
    • 3/2 Tbsp Gochujang paste
    • 2 Tbsp peanut butter
    • 1 Tbsp rice vinegar
    • 3 Tbsp water
    • 2 Tbsp soy sauce
    • 1 Tbsp sesame oil
    • 2 tsp brown sugar
    • 1 tsp garlic
    • 1 Tbsp lime juice

Instructions

  • Cook noodles.
  • Mix all the sauce ingredients together. Toss noodles in the sauce.
  • Take 2-3 bok choy leaves, trim the greens. Cut the stem into several large parts, chop the greens.
  • Saut√© the garlic for 30 seconds, then add the stems. Season with salt. Cook until stems soften and slightly brown. Add the leaves and cook until wilted.
